- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- Your choice of chicken broth or sauce (like barbecue or tomato-based)
- Salt, to taste
- Pepper, to taste
- Your favorite seasoning
- Optional: beans, corn, or cheese
Instructions
- Dice the onion and bell peppers. Trim excess fat from fresh chicken.
- Place the chicken at the bottom of the slow cooker, followed by the vegetables.
- In a separate bowl, mix the broth or sauce with herbs and spices.
- Pour the sauce mixture over the chicken and veggies.
- Cook on low for 6-8 hours or high for 3-4 hours. Ensure the chicken is cooked through.
- Shred the chicken with two forks right in the cooker before serving.
Notes
Serve over rice, mashed potatoes, or in wraps. Leftovers can be stored in the fridge for 3-4 days or frozen for up to 3 months.
