- 3 ripe bananas, mashed
- 1/3 cup melted butter
- 1 teaspoon baking soda
- Pinch of salt
- 3/4 cup sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 tablespoon cinnamon
- 1/4 cup brown sugar
- Cream cheese frosting (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
- Blend the mashed bananas with melted butter until smooth.
- Stir in the baking soda and a pinch of salt.
- Mix in the sugar, beaten egg, and vanilla extract until well combined.
- Add the flour and mix gently until the batter is just combined—avoid over-mixing!
- Combine the cinnamon and brown sugar for the swirl in a small bowl.
- Pour half of the banana batter into the prepared baking pan, then sprinkle half of the cinnamon sugar mixture on top.
- Add the remaining batter on top and sprinkle with the rest of the cinnamon sugar mix.
- Swirl with a knife to create a marble effect throughout the batter.
- Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
- Let it cool in the pan for about 10 minutes before transferring to a wire rack. Drizzle with cream cheese frosting if desired before slicing.
Notes
Use ripe bananas for the best flavor. You can reduce sugar by replacing it with applesauce or honey.
