- 4 chicken thighs
- 1 can cream of chicken soup
- 1 cup chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Optional: Fresh parsley for garnish
Instructions
- Place the chopped onion and minced garlic at the bottom of the crockpot.
- Lay the chicken thighs on top of the onion and garlic.
- In a separate bowl, mix together the cream of chicken soup, chicken broth, Italian seasoning, salt, and pepper.
- Pour this creamy mixture over the chicken thighs, ensuring they’re well coated.
- Cover the crockpot and set it to cook on low for 6-7 hours or on high for 3-4 hours, until the chicken can be shredded easily with a fork.
- Serve the chicken over rice or mashed potatoes and garnish it with fresh parsley if desired.
Notes
For a richer gravy, add a splash of white wine to the mixture. Leftovers can be stored in an airtight container for up to 4 days or frozen for up to 3 months.
