- 12 oz rotini pasta
- 1 cup cherry tomatoes halved
- 1 cup diced cucumber
- 1/2 cup diced red onion
- 3/4 cup chopped salami
- 1/2 cup creamy Italian dressing
- 1/4 cup grated parmesan cheese
- 2 tbsp chopped parsley
- 1/4 tsp cracked black pepper
Instructions
- 1. Bring a large pot of salted water to a boil
- 2. Cook rotini pasta until al dente
- 3. Drain and rinse pasta with cool water
- 4. Allow pasta to cool completely
- 5. Slice tomatoes and dice cucumber and onion
- 6. Chop salami into small pieces
- 7. Combine pasta vegetables and salami in a bowl
- 8. Add dressing and toss to coat evenly
- 9. Sprinkle parmesan parsley and pepper on top
- 10. Chill for 30 minutes before serving
