This creamy Grinder Pasta Salad is a viral deli-style pasta salad made with rotini pasta, cherry tomatoes, cucumber, red onion, salami, and parmesan tossed in a creamy Italian dressing. It’s colorful, crunchy, and perfect for potlucks, BBQs, and summer gatherings.

Ingredients

  • 12 oz rotini pasta
  • 1 cup cherry tomatoes halved
  • 1 cup diced cucumber
  • 1/2 cup diced red onion
  • 3/4 cup chopped salami
  • 1/2 cup creamy Italian dressing
  • 1/4 cup grated parmesan cheese
  • 2 tbsp chopped parsley
  • 1/4 tsp cracked black pepper

Instructions

  1. 1. Bring a large pot of salted water to a boil
  2. 2. Cook rotini pasta until al dente
  3. 3. Drain and rinse pasta with cool water
  4. 4. Allow pasta to cool completely
  5. 5. Slice tomatoes and dice cucumber and onion
  6. 6. Chop salami into small pieces
  7. 7. Combine pasta vegetables and salami in a bowl
  8. 8. Add dressing and toss to coat evenly
  9. 9. Sprinkle parmesan parsley and pepper on top
  10. 10. Chill for 30 minutes before serving
