- 1/4 cup honey
- 1/4 cup lime juice
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 2 cups cooked rice
- 1 avocado, diced
- 1/4 cup chopped cilantro
- 1 lime, for garnish
Instructions
- Mix the Marinade: In a bowl, whisk together the honey, lime juice, olive oil, garlic powder, and salt and pepper to taste.
- Marinate the Chicken: Place the chicken breasts in the marinade and let them soak for at least 30 minutes.
- Heat Your Grill or Skillet: Preheat your grill or skillet over medium-high heat.
- Cook the Chicken: Remove the chicken from the marinade and cook for about 6-7 minutes on each side.
- Prepare the Rice Mixture: In a separate bowl, combine the cooked rice, diced avocado, and chopped cilantro.
- Assemble the Dish: Place a generous scoop of the avocado rice mixture on a plate, slice the grilled chicken, and arrange it on top.
- Garnish and Serve: Finish with lime wedges for extra zing.
