- 2 chicken breasts, diced
- 2 cups fresh spinach
- 1 cup mushrooms, sliced
- 1 cup shredded cheese (mozzarella or cheddar)
- 2 cloves garlic, minced
- 1 teaspoon olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Heat the olive oil in a skillet over medium heat.
- Add minced garlic and sauté until fragrant (around 1 minute).
- Toss in the sliced mushrooms and cook until tender, about 4–5 minutes.
- Mix in the fresh spinach and sauté until wilted.
- Combine the diced chicken with the sautéed spinach and mushrooms in a baking dish.
- Sprinkle the shredded cheese over the top and season with salt and pepper to taste.
- Bake for 25–30 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
- Serve warm and enjoy!
Notes
Feel free to substitute spinach with kale and mix different cheeses for added flavor.
