- 3 tbsp potato starch
- 3 tbsp all-purpose flour
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 3 tbsp neutral oil (like canola)
- 8 cloves of minced garlic
- 2 stalks green onion (green and white parts separated)
- 1 tsp red chili flakes
- 1/2 cup chicken stock (or substitute with water and chicken bouillon)
- 3 tbsp honey
- 1 tbsp rice vinegar
- 1 tbsp dark soy sauce
- 1 tsp cornstarch
- Green onion (green parts) for garnish
- Sesame seeds for garnish
Instructions
- In a bowl, mix together the chicken stock (or water and bouillon), honey, rice vinegar, dark soy sauce, and cornstarch to prepare the sauce. Set aside.
- Using a paper towel, dry the chicken thighs thoroughly. On a large plate, combine the potato starch, all-purpose flour, garlic powder, salt, and black pepper. Lightly coat each thigh in this mixture.
- In a large frying pan, heat enough neutral oil over medium-high heat to cover the bottom. Once hot, carefully add the chicken thighs. Fry for about 7 minutes on each side or until golden brown. Remove the chicken and set aside.
- In the same pan, add minced garlic, the white part of the green onion, and red chili flakes. Sauté for about 3 minutes until the garlic turns golden.
- Pour the sauce into the pan and cook for 1 minute until it thickens. Add the chicken back into the pan and cook for an additional 5 minutes, ensuring the chicken is coated with the sauce.
- Serve the chicken over steamed rice and vegetables, garnished with sesame seeds and green onion tops.
Notes
Patience is key while frying the chicken to ensure a crispy finish. Adjust sweetness or acidity of the sauce to your liking.
