Instructions
- Preheat your oven to 350°F (175°C).
- Combine the cup of salted butter and cup of granulated sugar in a large bowl. Cream together until smooth and fluffy.
- Mix in the egg, vanilla extract, and almond extract, blending well.
- Incorporate the flour and baking powder gradually until you achieve a dough.
- Roll the dough into 1-inch balls and place them on a parchment-lined baking sheet. Flatten each ball slightly with a glass.
- Refrigerate the dough balls for about 30 minutes, then bake for 10-12 minutes or until lightly golden.
- Prepare the frosting in a separate bowl by combining room-temperature cream cheese, 1/2 cup salted butter, powdered sugar, and vanilla extract. Beat until smooth and creamy.
- Frost each cooled cookie generously with the cream cheese frosting.
- Top each frosted cookie with a medley of fresh fruit.
- Refrigerate the cookies for about 30 minutes before serving for optimal flavor.
