- 1.5 lbs beef stew meat, cut into bite-size pieces
- 2 cups baby potatoes, halved
- 1/2 cup unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Place the beef stew meat and the halved baby potatoes into the slow cooker in an even layer.
- In a small saucepan over medium heat, melt the butter. Add the minced garlic, salt, and pepper. Cook for 1–2 minutes, stirring, until fragrant but not browned.
- Pour the warm garlic-butter mixture evenly over the beef and potatoes in the slow cooker.
- Cover and cook on low for 6–8 hours, or on high for 3–4 hours, until the beef is fork-tender and the potatoes are cooked through.
- Taste and adjust seasoning. Stir gently, then serve warm, garnished with fresh parsley.
Notes
For a richer flavor, consider browning the beef before cooking. Use waxy potatoes to avoid mushy results.
