Description

Comforting slow-cooker dinner featuring tender beef and baby potatoes in a rich garlic butter sauce.

Ingredients

Scale
  • 1.5 lbs beef stew meat, cut into bite-size pieces
  • 2 cups baby potatoes, halved
  • 1/2 cup unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Place the beef stew meat and the halved baby potatoes into the slow cooker in an even layer.
  2. In a small saucepan over medium heat, melt the butter. Add the minced garlic, salt, and pepper. Cook for 1–2 minutes, stirring, until fragrant but not browned.
  3. Pour the warm garlic-butter mixture evenly over the beef and potatoes in the slow cooker.
  4. Cover and cook on low for 6–8 hours, or on high for 3–4 hours, until the beef is fork-tender and the potatoes are cooked through.
  5. Taste and adjust seasoning. Stir gently, then serve warm, garnished with fresh parsley.

Notes

For a richer flavor, consider browning the beef before cooking. Use waxy potatoes to avoid mushy results.
