- 1.5 pounds beef stew meat, cut into bite-sized pieces
- 1 pound baby potatoes, halved
- 4 tablespoons unsalted butter, melted
- 3 cloves garlic, minced
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 0.5 teaspoon dried thyme
- 0.5 teaspoon dried rosemary
- 0.5 teaspoon salt, or to taste
- 0.25 teaspoon black pepper
- 0.25 cup beef broth
- 1 tablespoon olive oil, for searing
Instructions
- Gather all ingredients. Cut beef into bite-sized pieces and halve the baby potatoes. Pat the beef dry with paper towels.
- Optional: Parboil the halved potatoes for 5–7 minutes in salted boiling water. Drain and set aside.
- Heat 1 tablespoon olive oil in a skillet over medium-high heat. Sear beef bites until browned on all sides, about 1–2 minutes per side. Transfer seared pieces to the slow cooker.
- In a small bowl, whisk together melted butter, minced garlic, onion powder, smoked paprika, thyme, rosemary, salt, and pepper to make the garlic butter sauce.
- Place halved potatoes in the slow cooker around and beneath the beef. Pour the garlic butter sauce over everything. Add 1/4 cup beef broth.
- Cover and cook on Low for 6–8 hours or on High for 3–4 hours, until beef is fork-tender and potatoes are soft.
- Let the dish rest for about 10 minutes before serving.
Notes
For a dairy-free option, replace melted butter with olive oil and vegan butter. For more garlic flavor, add an extra clove or use roasted garlic.
