  • 0.25 cup beef broth
  • 1 tablespoon olive oil, for searing

Instructions

  1. Gather all ingredients. Cut beef into bite-sized pieces and halve the baby potatoes. Pat the beef dry with paper towels.
  2. Optional: Parboil the halved potatoes for 5–7 minutes in salted boiling water. Drain and set aside.
  3. Heat 1 tablespoon olive oil in a skillet over medium-high heat. Sear beef bites until browned on all sides, about 1–2 minutes per side. Transfer seared pieces to the slow cooker.
  4. In a small bowl, whisk together melted butter, minced garlic, onion powder, smoked paprika, thyme, rosemary, salt, and pepper to make the garlic butter sauce.
  5. Place halved potatoes in the slow cooker around and beneath the beef. Pour the garlic butter sauce over everything. Add 1/4 cup beef broth.
  6. Cover and cook on Low for 6–8 hours or on High for 3–4 hours, until beef is fork-tender and potatoes are soft.
  7. Let the dish rest for about 10 minutes before serving.

Notes

For a dairy-free option, replace melted butter with olive oil and vegan butter. For more garlic flavor, add an extra clove or use roasted garlic.
