Description
A quick and comforting garlic butter spaghetti dish with melty mozzarella and savory Italian sausage, perfect for weeknight dinners.

- 400 g spaghetti
- 250 g Italian sausage (mild or spicy, casings removed)
- 3 cups fresh spinach (washed; baby spinach works best)
- 4 cloves garlic, minced
- 4 tablespoons unsalted butter
- 1 cup shredded mozzarella cheese
- 1/3 cup grated Parmesan cheese
- Salt, to taste
- Black pepper, to taste
- 1 tablespoon olive oil
Instructions
- Bring a large pot of well-salted water to a boil. Add the spaghetti and cook until al dente according to package directions. Reserve about 1/2 cup of the pasta cooking water, then drain the pasta and set aside.
- While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the sausage, crumble it with a wooden spoon, and cook until browned and cooked through, about 6–8 minutes. Use a slotted spoon to transfer the sausage to a plate.
- Reduce heat to medium-low and add the butter to the skillet. When the butter is foaming, add the minced garlic and cook for about 30–60 seconds until fragrant.
- Add the fresh spinach to the skillet and sauté briefly until wilted, about 1–2 minutes.
- Return the cooked sausage to the skillet. Add the drained spaghetti and toss thoroughly so the noodles are coated in the garlic butter.
- Sprinkle the shredded mozzarella and grated Parmesan evenly over the pasta. Cover the skillet with a lid and let sit for 2–3 minutes so the cheese melts.
- Remove the lid, season with salt and plenty of black pepper, toss gently, and serve immediately.
Notes
This dish can be enjoyed on its own or paired with a crisp green salad. Store leftovers in an airtight container and refrigerate for up to 3-4 days.
