- 1 lb steak (sirloin, ribeye, or New York strip), cut into 1-inch cubes
- 1 medium zucchini, cut into half-moons
- 3 tablespoons butter
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Optional: Fresh parsley, chopped, for garnish
Instructions
- Pat the steak bites dry with paper towels and generously season them with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat until shimmering.
- Add the steak bites in a single layer and sear for 1-2 minutes per side until they’re nicely browned. Remove from the skillet and set aside.
- Melt the butter in the same skillet and sauté the minced garlic for about 30 seconds until fragrant, being careful not to burn it.
- Toss in the zucchini and cook for 3-5 minutes until tender-crisp.
- Return the seared steak bites to the skillet, combine them with zucchini, and let them cook together for an additional 1-2 minutes.
- Garnish with fresh parsley if desired and serve hot.
Notes
Use well-marbled cuts for best flavor. If zucchini isn’t available, substitute with bell peppers or asparagus.
