Description
A delightful blend of garlicky, cheesy chicken and crispy potatoes, this skillet meal is perfect for busy weeknights or elegant family dinners.
Ingredients
Scale
- 2 chicken breasts, cubed
- 4–5 small/medium-sized potatoes, cubed
- Olive oil (for tossing the potatoes)
- Salt and pepper
- Garlic powder
- Paprika (for seasoning potatoes)
- 2 tablespoons butter
- ½ teaspoon each of salt and pepper (for seasoning chicken)
- 1 teaspoon each of paprika, onion powder, and Italian seasoning
- 2 tablespoons minced garlic
- Buffalo Wild Wings Garlic Parmesan Sauce (as desired)
- 1 cup shredded mozzarella cheese
Instructions
- Prepare the potatoes: Start by washing and peeling your potatoes. Cut them into small cubes. Toss the cubed potatoes in olive oil, coating them evenly with salt, pepper, garlic powder, and paprika.
- Cook the potatoes: Preheat your air fryer to 400°F. Cook the potatoes for about 20 minutes, shaking the basket midway to ensure they cook evenly. They’re done when crispy on the outside and tender inside.
- Season the chicken: While the potatoes are cooking, cut your chicken breasts into small cubes. Season the chicken in a bowl with ½ teaspoon each of salt and pepper, plus 1 teaspoon each of paprika, onion powder, and Italian seasoning.
- Cook the chicken: Melt 2 tablespoons of butter in a skillet over medium-high heat. Add your seasoned chicken cubes and sauté them until they reach an internal temperature of 165°F and are golden brown.
- Add garlic and sauce: Stir the minced garlic into the skillet with the chicken, and pour in the Buffalo Wild Wings Garlic Parmesan Sauce. Cook for another 1-2 minutes, allowing the flavors to meld.
- Combine potatoes and chicken: Once your potatoes are ready, add them to the skillet with the chicken. Toss everything together, ensuring the potatoes are coated in the delicious sauce.
- Melt the cheese: Finally, sprinkle the shredded mozzarella over your skillet. Cover it with a lid until the cheese melts or transfer it under the broiler for a few minutes until it’s bubbly and golden.
Notes
For a twist, try using chicken thighs or sweet potatoes. Serve with a salad or garlic knots for a complete meal.
