A tender Greek chicken bake with feta, cherry tomatoes, and olives, perfect for busy weeknights.
Ingredients

- 4 boneless, skinless chicken breasts
- 1 cup cherry tomatoes, halved
- 1/2 cup feta cheese, crumbled
- 1/2 cup pitted olives, sliced
- 2 tablespoons olive oil
- 2 teaspoons dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Pat the chicken breasts dry and place them in a single layer in a large baking dish.
- Drizzle the chicken with olive oil, then sprinkle with dried oregano, salt, and pepper.
- Scatter the halved cherry tomatoes and sliced olives over and around the chicken.
- Crumble the feta cheese evenly on top of the chicken and tomatoes.
- Bake uncovered for 25–30 minutes, or until the chicken reaches 165°F in the thickest part.
- Remove from the oven and let rest for 5 minutes. Garnish with chopped fresh parsley before serving.
Notes
For a caramelized top, broil for 1–2 minutes at the end. Can substitute chicken breasts for boneless thighs or eggplant for a vegetarian version.
