  • 12 oz egg noodles
  • 1 lb ground beef 80/20
  • 1 small yellow onion diced
  • 8 oz cremini mushrooms sliced
  • 2 cloves garlic minced
  • 2 cups beef broth
  • 1 cup sour cream
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 2 tablespoons butter
  • 2 tablespoons all purpose flour
  • Salt and black pepper to taste
  • 1 teaspoon paprika
  • Fresh parsley for garnish

Instructions

  1. 1. Cook egg noodles in salted water until tender then drain
  2. 2. Brown ground beef in large skillet breaking into crumbles then drain grease
  3. 3. Add butter onion and mushrooms cooking until softened and golden
  4. 4. Stir in garlic paprika salt and pepper cooking until fragrant
  5. 5. Sprinkle flour over mixture and stir to coat
  6. 6. Slowly add beef broth stirring constantly until smooth
  7. 7. Add Worcestershire sauce and Dijon then simmer until thickened
  8. 8. Lower heat and stir in sour cream without boiling
  9. 9. Combine noodles with sauce or serve sauce over noodles
  10. 10. Garnish with parsley and serve warm

Notes

  • Do not boil after adding sour cream to prevent curdling
  • Use lean beef for lighter texture
  • Add extra broth if sauce thickens too much
