- 1 pound ground turkey (93/7 or 85/15)
- 1 bell pepper, diced
- 1 onion, diced
- 1 cup corn (fresh or frozen)
- 1 can black beans, drained and rinsed
- 2 tablespoons taco seasoning
- 1 cup diced tomatoes
- Salt and pepper to taste
- Olive oil for cooking
- Optional toppings: avocado, shredded cheese, cilantro, lime wedges
Instructions
- Heat a large skillet over medium heat and add a drizzle of olive oil.
- Add the diced onion and bell pepper. Sauté until softened and fragrant, about 4–5 minutes.
- Add the ground turkey to the skillet, breaking it into pieces with a wooden spoon, and cook until no longer pink, about 6–8 minutes.
- Sprinkle the taco seasoning over the turkey and stir well, cooking for about 1 minute.
- Stir in corn, black beans, and diced tomatoes. Combine thoroughly.
- Reduce heat to medium-low and simmer for 8–10 minutes, stirring occasionally.
- Taste and adjust with salt and pepper before serving with toppings of choice.
Notes
For a heartier version, adapt this into a casserole-style dish by adding rice. For dairy-free, skip cheese and add avocado.
