  • 2 cups cooked jasmine rice

  • 1 red bell pepper, diced

  • 1 avocado, sliced

  • Lime wedges, for serving

Instructions

  1. Whisk together the soy sauce, brown sugar, pineapple juice, ketchup, rice vinegar, garlic, and ginger in a medium bowl until the sugar dissolves.
  2. Place the chicken thighs in a resealable plastic bag and pour the marinade over them. Seal tightly and refrigerate for at least two hours, or overnight for best results.
  3. Preheat your grill or grill pan to medium-high heat. Remove the chicken from the marinade and discard any excess liquid.
