- 4 boneless, skinless chicken breasts (about 6–8 oz each)
- 3 tbsp honey
- Zest and juice of 2 limes (about 3–4 tbsp juice total)
- 2 cloves garlic, minced
- 2 tbsp olive oil (or avocado oil)
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 ripe mango, diced
- 1/4 cup red onion, finely chopped
- 1 tbsp extra lime juice (for salsa)
- 2 tbsp fresh cilantro, chopped
Instructions
- In a bowl, whisk together honey, lime zest and juice, minced garlic, olive oil, salt, and pepper until smooth to make the marinade.
- Place chicken breasts in a shallow dish or zip-top bag, pour the marinade over them, and marinate at room temperature for 30 minutes or in the fridge for up to 2 hours.
- Heat a skillet over medium-high heat with a little oil or preheat your grill. Sear the chicken for 4–6 minutes per side until golden and cooked through (internal temperature should reach 165°F / 74°C).
- Transfer chicken to a plate and let it rest for 5 minutes to redistribute juices.
- While the chicken rests, combine diced mango, red onion, extra lime juice, and cilantro to prepare the salsa.
- Serve the warm chicken topped with mango salsa.
Notes
For a smoky profile, consider adding jalapeño to the salsa or trying a chipotle honey variation. Store salsa separately to maintain texture.
