- 2 chicken breasts
- 2 sweet potatoes
- 2 tablespoons tahini
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 teaspoon paprika (optional)
- Fresh vegetables (e.g., spinach, kale, or arugula) for serving
Instructions
- Preheat the oven to 400°F (200°C).
- Peel and cube the sweet potatoes, then toss them in a bowl with olive oil, salt, pepper, and paprika if you’re using it. Spread the cubes evenly on a baking sheet and roast for about 25-30 minutes until they are tender and slightly caramelized.
- While the sweet potatoes are roasting, season the chicken breasts with salt and pepper. Grill or sauté them over medium heat for about 6-7 minutes on each side until they are golden brown and cooked through.
- Prepare the tahini sauce by mixing it in a small bowl with a bit of water until it’s a drizzling consistency.
- Once the chicken and sweet potatoes are done, slice the chicken into strips. Assemble your bowl by placing a generous portion of fresh vegetables at the bottom, followed by the roasted sweet potatoes and sliced chicken. Drizzle the tahini mixture on top and serve immediately.
Notes
Use firm sweet potatoes without blemishes. The tahini can be substituted with nut butter or yogurt if needed.
