- 1 lb lean ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- Handful of fresh basil or parsley, for garnish
- 1 can of tomatoes with juices (14.5 oz)
- 1 cup low-sodium beef broth
- 8 oz penne pasta
- 1 tbsp Italian seasoning
- Salt and pepper, to taste
- 1 tbsp olive oil
- ½ cup plain Greek yogurt
- ¼ cup grated Parmesan cheese
Instructions
- Cook the penne pasta in a large pot of salted boiling water according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, stirring until softened. Then, add the ground beef and cook until browned. Season with salt, pepper, and Italian seasoning.
- Once the beef is browned, pour in the canned tomatoes and beef broth. Let it simmer for about 5-10 minutes until the sauce thickens slightly.
- Reduce heat to low and stir in Greek yogurt and Parmesan cheese until well combined and creamy.
- Toss the drained pasta into the sauce until evenly coated.
- Top with fresh basil or parsley before serving, and enjoy!
Notes
For a lighter version, substitute ground beef with ground turkey or add more veggies like spinach. Store leftovers in an airtight container in the refrigerator for up to 3 days.
