Ingredients

- 1 pound baby carrots (or regular carrots, peeled and cut into sticks)
- 3 tablespoons unsalted butter, melted
- 3 tablespoons honey
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Prep the carrots: If using regular carrots, wash, peel, and cut them into sticks. If using baby carrots, simply rinse and pat dry.
- Make the sauce: In a small bowl, combine melted butter, honey, minced garlic, salt, and pepper. Mix until well combined.
- Toss the carrots: Place the carrots in a large bowl and drizzle the honey garlic butter sauce over them. Toss until the carrots are evenly coated.
- Roast the carrots: Preheat your oven to 400°F (200°C). Spread the coated carrots on a baking sheet in a single layer. Roast for about 20-25 minutes, turning halfway through, until the carrots are tender and have begun to caramelize.
- Serve: Once out of the oven, transfer the roasted carrots to a serving platter. Sprinkle with fresh parsley for a pop of color and enjoy!
