- 1 lb ground beef (80/20 preferred for flavor)
- 2 cloves garlic, minced
- 1 inch fresh ginger, minced (or 1/2 tsp ground ginger)
- 1/4 cup soy sauce (low-sodium preferred)
- 2 cups cooked rice (white, brown, or jasmine)
- Green onions, thinly sliced, for garnish
- Optional vegetables: bell peppers, broccoli florets, shredded carrots
Instructions
- Prep your aromatics and toppings: Mince the garlic and ginger. Thinly slice the green onions. If using vegetables, chop them into bite-sized pieces and set aside.
- Heat a large skillet over medium-high. Add the ground beef and let it sear untouched for 1–2 minutes to brown.
- Break up the beef with a spatula and continue cooking until no pink remains and lightly caramelized, about 6–8 minutes total.
- Drain excess fat if desired. Reduce heat to medium.
- Add the minced garlic and ginger, cooking for 30–60 seconds until fragrant.
- Pour in the soy sauce and add 1 tablespoon sugar or honey. Stir and let the sauce bubble and reduce slightly for 2–3 minutes until it thickens.
- Taste and adjust the seasoning by adding salt or more soy if needed.
- Serve hot over rice, topped with sliced green onions and optional steamed or sautéed vegetables.
Notes
For gluten-free, use tamari or coconut aminos. Leaner beef reduces fat but may require added oil during cooking.
