- 1 1/2 lb chicken breast, patted dry
- 1 Tbsp olive oil
- 1 Tbsp parsley, optional
- 1/2 lemon, optional
- 2 large eggs
- 1 garlic clove, minced
- 1/2 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- 1 cup Parmesan cheese, grated
- 3 Tbsp all-purpose flour
- 8 Tbsp unsalted butter
- 2 garlic cloves, minced
- 1/4 cup lemon juice
- 1/4 cup chicken broth
- 1/4 tsp ground black pepper
Instructions
- Cut the chicken breasts in half lengthwise to create thinner cutlets and pound to an even thickness.
- In a bowl, whisk together the eggs and minced garlic.
- In another bowl, combine Parmesan cheese, flour, Italian seasoning, salt, and pepper.
- Dip each chicken cutlet in the egg mixture, then dredge in the Parmesan mixture.
- Heat a non-stick skillet over medium heat; add oil and cook chicken cutlets for 4-5 minutes on each side until golden and cooked to 165˚F.
- In a saucepan, melt butter over low heat, add minced garlic, cook until fragrant, then stir in chicken broth, lemon juice, and pepper; simmer for 2 minutes.
- Pour the sauce over the cooked chicken and toss to coat. Garnish with lemon slices and parsley.
Notes
For a healthier option, consider grilling the chicken instead of frying.
