  • 1 Tbsp parsley, optional

  • 2 large eggs
  • 1 garlic clove, minced
  • 1/2 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 1 cup Parmesan cheese, grated
  • 3 Tbsp all-purpose flour
  • 8 Tbsp unsalted butter
  • 2 garlic cloves, minced
  • 1/4 cup lemon juice
  • 1/4 cup chicken broth
  • 1/4 tsp ground black pepper

Instructions

  1. Cut the chicken breasts in half lengthwise to create thinner cutlets and pound to an even thickness.
  2. In a bowl, whisk together the eggs and minced garlic.
  3. In another bowl, combine Parmesan cheese, flour, Italian seasoning, salt, and pepper.
  4. Dip each chicken cutlet in the egg mixture, then dredge in the Parmesan mixture.
  5. Heat a non-stick skillet over medium heat; add oil and cook chicken cutlets for 4-5 minutes on each side until golden and cooked to 165˚F.
  6. In a saucepan, melt butter over low heat, add minced garlic, cook until fragrant, then stir in chicken broth, lemon juice, and pepper; simmer for 2 minutes.
  7. Pour the sauce over the cooked chicken and toss to coat. Garnish with lemon slices and parsley.
