A bright and comforting one-pan meal featuring crispy lemon-scented chicken thighs and golden Yukon Gold potatoes, infused with Mediterranean flavors.
Ingredients

- 4 bone-in, skin-on chicken thighs
- 3 tablespoons olive oil (divided)
- 3 garlic cloves, minced
- 2 teaspoons fresh or dried oregano
- Salt, to taste
- Black pepper, to taste
- 1/2 teaspoon red pepper flakes (optional)
- Juice of 1 lemon (about 2 tablespoons)
- 1.5 pounds Yukon Gold potatoes, washed and halved
- 1 large lemon, thinly sliced
Instructions
- Preheat the oven to 400°F (200°C).
- Pat the chicken thighs dry with paper towels.
- Whisk together 2 tablespoons olive oil, lemon juice, garlic, oregano, salt, pepper, and red pepper flakes in a bowl.
- Add the chicken to the marinade and coat thoroughly. Marinate at room temperature for 15 minutes or refrigerate for up to several hours.
- Wash and halve the Yukon Gold potatoes and place them in a baking pan. Drizzle with the remaining olive oil and season with salt and pepper.
- Toss the potatoes to coat and nestle the marinated chicken thighs skin-side up among the potatoes.
- Scatter the lemon slices over the chicken and potatoes.
- Roast for 40–45 minutes, or until the chicken’s internal temperature reads 165°F (74°C) and the potatoes are tender.
- Remove the pan from the oven and let the chicken rest for 5 minutes before serving.
Notes
For a deeper lemon flavor, toss lemon zest into the marinade. Serve with a green salad or garnish with parsley or feta.
