  • 1 lb ground beef or black beans
  • 1 packet taco seasoning
  • 1 cup shredded cheddar or Mexican blend cheese
  • ½ cup sour cream or Greek yogurt
  • ½ cup salsa
  • ¼ cup sliced green onions
  • ¼ cup chopped cilantro
  • Optional: diced tomatoes, corn, jalapeños, olives

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss the diced potatoes with olive oil, chili powder, smoked paprika, garlic powder, cumin, salt, and pepper until well-coated.
  3. Spread the seasoned potatoes onto a baking sheet in a single layer, and roast for 25–30 minutes, flipping halfway through until crispy and golden.
  4. Brown the ground beef in a skillet over medium heat. Stir in taco seasoning and water; simmer until thickened, about 5-7 minutes. If using black beans, heat them separately with some seasoning.
  5. Remove the potatoes from the oven and transfer them to individual bowls. Load with ground beef or seasoned black beans, then sprinkle shredded cheese on top.
  6. Top with sour cream, salsa, sliced green onions, chopped cilantro, and any additional toppings you desire.

Notes
