  • 15 ounces black beans (1 can, drained and rinsed)
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1 cup shredded cheddar cheese
  • 1 cup cherry tomatoes (halved)
  • 1 medium avocado (diced)
  • 1/4 cup fresh cilantro (loosely packed and chopped)
  • Lime wedges (for serving)
  • Sour cream (for topping)

Instructions

  1. Preheat your oven to 425°F (220°C). Spread the diced potatoes on a baking sheet and toss with olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper.
  2. Bake the potatoes for 30–35 minutes, flipping halfway through, until golden brown and crispy.
  3. While the potatoes roast, heat a skillet over medium heat. Add ground beef or turkey, and cook until browned (7-8 minutes).
  4. Stir in chili powder, cumin, and chopped red onion. Cook for about 5 minutes until the onion softens.
  5. Add black beans and corn, cooking for an additional 3-4 minutes until heated through.
  6. Divide crispy potatoes among 4 bowls, topping with meat mixture and shredded cheddar. Let sit for 30 seconds to melt cheese.
  7. Add cherry tomatoes, diced avocado, and chopped cilantro. Serve with lime wedges and a dollop of sour cream.
