Ingredients

  • 2 chicken breasts
  • 8 oz pasta (penne or your choice)
  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Fresh basil for garnish

Instructions

  1. Cook the pasta in a large pot of salted boiling water according to package instructions. Drain and set aside.
  2. In the same pot, melt a couple of tablespoons of butter over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
  3. Season chicken breasts with salt, pepper, and Italian seasoning. Add them to the pot and cook for 6-7 minutes per side until browned and cooked through. Remove and set aside.
  4. Add halved cherry tomatoes to the pot, cooking until softened, about 3-4 minutes.
  5. Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan cheese until melted and smooth.
  6. Slice the cooked chicken and return it to the pot. Add the cooked pasta and toss gently to coat everything in the sauce.
  7. Plate the dish warm, garnished with fresh basil.

Notes

For variations, try different pasta shapes or add spinach/arugula before serving. Can be made dairy-free by substituting heavy cream and cheese.
