- 2 chicken breasts
- 8 oz pasta (penne or your choice)
- 1 cup cherry tomatoes, halved
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- Fresh basil for garnish
Instructions
- Cook the pasta in a large pot of salted boiling water according to package instructions. Drain and set aside.
- In the same pot, melt a couple of tablespoons of butter over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
- Season chicken breasts with salt, pepper, and Italian seasoning. Add them to the pot and cook for 6-7 minutes per side until browned and cooked through. Remove and set aside.
- Add halved cherry tomatoes to the pot, cooking until softened, about 3-4 minutes.
- Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan cheese until melted and smooth.
- Slice the cooked chicken and return it to the pot. Add the cooked pasta and toss gently to coat everything in the sauce.
- Plate the dish warm, garnished with fresh basil.
Notes
For variations, try different pasta shapes or add spinach/arugula before serving. Can be made dairy-free by substituting heavy cream and cheese.
