- 2 carrots, diced
- 2 celery stalks, diced
- 1 can (14.5 ounces) diced tomatoes
- 4 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 cups baby spinach
- Fresh basil for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, diced carrots, and celery. Sauté until they soften, about 5 minutes.
- Toss in the cubed chicken and cook until it’s golden brown all over, around 7 minutes.
- Stir in the diced tomatoes, chicken broth, Italian seasoning, salt, and pepper. Bring this mixture to a boil, then reduce the heat and let it simmer for about 20 minutes to develop the flavors.
- Pour in the heavy cream, stirring until everything is beautifully combined.
- Add the baby spinach, stirring until it’s just wilted, which will take about 2 minutes.
- Serve hot and garnish with fresh basil for a beautiful presentation.
