Description
Delicious and nutritious Mediterranean quesadillas filled with spinach, feta, mozzarella, and red onion, perfect for a quick meal or casual gathering.
Ingredients
Scale
- 4 flour tortillas
- 1 cup fresh spinach (chopped)
- 1/2 cup shredded mozzarella cheese
- 1/2 cup crumbled feta cheese
- 1 small tomato (diced)
- 1/4 cup red onion (thinly sliced)
- 1 tablespoon olive oil
- Black pepper (to taste)
Instructions
- Combine the filling: In a mixing bowl, combine the mozzarella, feta, spinach, diced tomato, red onion, and a pinch of black pepper. Mix them until well combined.
- Prepare the tortillas: Lay one flour tortilla flat and place one-fourth of the filling mixture on half of it. Fold the tortilla over the filling, creating a half-moon shape.
- Heat the skillet: Preheat a non-stick skillet over medium heat. Once hot, add the olive oil.
- Cook the quesadilla: Place the filled quesadilla in the skillet. Cook for about 3-4 minutes or until it’s golden brown on the bottom. Carefully flip it over and cook the other side for another 3-4 minutes until crispy.
- Slice and serve: Remove from heat, slice into wedges, and serve warm!
Notes
Feel free to adjust the cheeses or add chopped olives for a twist. For a dairy-free option, use vegan cheese.
