  • 1 tablespoon olive oil
  • Black pepper (to taste)

Instructions

  1. Combine the filling: In a mixing bowl, combine the mozzarella, feta, spinach, diced tomato, red onion, and a pinch of black pepper. Mix them until well combined.
  2. Prepare the tortillas: Lay one flour tortilla flat and place one-fourth of the filling mixture on half of it. Fold the tortilla over the filling, creating a half-moon shape.
  3. Heat the skillet: Preheat a non-stick skillet over medium heat. Once hot, add the olive oil.
  4. Cook the quesadilla: Place the filled quesadilla in the skillet. Cook for about 3-4 minutes or until it’s golden brown on the bottom. Carefully flip it over and cook the other side for another 3-4 minutes until crispy.
