- 4 flour tortillas
- 2 cups fresh spinach, roughly chopped
- 1 cup crumbled feta cheese
- 1 cup shredded mozzarella cheese
- 1 medium red onion, thinly sliced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Sauté the sliced red onion until translucent, about 3-4 minutes.
- Add the chopped spinach and cook until it wilts, typically another 2-3 minutes.
- Mix in crumbled feta and shredded mozzarella until well combined off the heat.
- Assemble the quesadillas by placing a tortilla into the skillet, filling it with the mixture, and folding it in half.
- Cook for 2-3 minutes on each side until the tortilla is golden brown and the cheese is melted.
- Serve warm and cut into wedges.
Notes
Serve with tzatziki or your favorite salsa for extra flavor. They can be refrigerated for up to 3 days or frozen for up to 2 months.
