Description

Quick and easy Mediterranean quesadillas filled with creamy mozzarella, tangy feta, fresh spinach, and red onion.

Ingredients

Scale
  • 4 flour tortillas (10-inch or gluten-free)
  • 1 cup fresh spinach, chopped (roughly packed)
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 small tomato, diced
  • 1/4 cup red onion, thinly sliced
  • 1 tablespoon olive oil
  • Black pepper, to taste

Instructions

  1. In a medium bowl, combine the mozzarella, feta, chopped spinach, diced tomato, sliced red onion, and black pepper. Mix until evenly distributed.
  2. Lay a tortilla flat and spoon one-fourth of the filling onto half of it. Fold the tortilla over and press lightly to seal.
  3. Heat a non-stick skillet over medium heat and add olive oil.
  4. Place one filled tortilla in the skillet. Cook for 3–4 minutes until golden brown, then flip and cook for another 3–4 minutes until the cheese is melted.
  5. Transfer to a cutting board, slice into wedges, and serve warm.

Notes

For best results, reheat leftover quesadillas in a skillet to restore crispiness.
