- 4 ears fresh corn husked
- 1/4 cup mayonnaise
- 1/4 cup sour cream or Mexican crema
- 1/2 cup cotija cheese crumbled
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon garlic powder
- salt to taste
- chopped cilantro
- lime wedges for serving
Instructions
- 1. Remove husks and silk from the corn and pat dry
- 2. Heat a grill or grill pan to medium high heat
- 3. Grill the corn turning occasionally until lightly charred
- 4. Mix mayonnaise sour cream lime juice garlic powder and salt
- 5. Spread the creamy mixture over the hot grilled corn
- 6. Sprinkle cotija cheese evenly over the corn
- 7. Dust with chili powder and smoked paprika
- 8. Top with chopped cilantro and serve with lime wedges
Notes
- Use fresh corn for the best flavor
- Apply sauce while corn is still warm so it melts slightly
- Feta cheese works as a substitute for cotija
- Add Tajin seasoning for extra citrus chili flavor
