- 2 large eggs
- 2 cups milk
- 2 tablespoons sugar
- 1/4 teaspoon salt
- 2 tablespoons butter (melted)
- 1 cup shredded cheese (Swiss or Gruyère)
- 1/2 cup sliced ham
- 1/2 cup sliced turkey
- Raspberry jam
- Powdered sugar for dusting
Instructions
- Whisk together the flour, eggs, milk, sugar, and salt until smooth. Stir in melted butter.
- Heat a non-stick skillet over medium heat and lightly coat with butter.
- Pour a small amount of batter and swirl to create a thin layer. Cook until edges lift and turn golden, about 1-2 minutes.
- Flip and cook for another minute. Repeat with remaining batter.
- Assemble each crepe with cheese, ham, and turkey on one side, then fold over.
- Warm briefly in the skillet until cheese melts.
- Serve warm with raspberry jam and powdered sugar dusting.
Notes
For a healthier twist, substitute all-purpose flour with whole wheat flour. You can also use sautéed mushrooms or spinach and plant-based cheese for a vegetarian version.
