A delicious and easy one-pan meal featuring chicken, rice, and a sweet and tangy honey BBQ sauce.


Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • ½ cup BBQ sauce
  • ¼ cup honey
  • 1 cup mixed vegetables (frozen or fresh)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. In a large skillet over medium heat, add a drizzle of oil and sear the seasoned chicken for about 5 minutes on each side until it’s nicely browned.
  2. In a small bowl, whisk together BBQ sauce and honey until combined. Once the chicken is seared, pour the mixture over it.
  3. Add the rice and chicken broth to the skillet, stirring to incorporate everything.
  4. Bring the mixture to a simmer, cover, and reduce the heat to low. Let it cook for about 20 minutes, or until the rice is tender and has absorbed the liquid.
  5. In the last 5 minutes of cooking, place the mixed vegetables on top of the rice to steam.
  6. Remove from heat and let it sit for 5 minutes before fluffing the rice with a fork and serving.

Notes

For extra flavor, you can marinate the chicken in BBQ sauce and honey for a few hours before cooking.
