Description
A delicious and easy one-pan meal featuring chicken, rice, and a sweet and tangy honey BBQ sauce.
Ingredients

- 1 lb boneless, skinless chicken thighs or breasts
- 1 cup long-grain rice
- 2 cups chicken broth
- ½ cup BBQ sauce
- ¼ cup honey
- 1 cup mixed vegetables (frozen or fresh)
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp smoked paprika
- Salt and pepper to taste
Instructions
- In a large skillet over medium heat, add a drizzle of oil and sear the seasoned chicken for about 5 minutes on each side until it’s nicely browned.
- In a small bowl, whisk together BBQ sauce and honey until combined. Once the chicken is seared, pour the mixture over it.
- Add the rice and chicken broth to the skillet, stirring to incorporate everything.
- Bring the mixture to a simmer, cover, and reduce the heat to low. Let it cook for about 20 minutes, or until the rice is tender and has absorbed the liquid.
- In the last 5 minutes of cooking, place the mixed vegetables on top of the rice to steam.
- Remove from heat and let it sit for 5 minutes before fluffing the rice with a fork and serving.
Notes
For extra flavor, you can marinate the chicken in BBQ sauce and honey for a few hours before cooking.
