Description

A straightforward one-pan dish featuring tender chicken, flavorful rice, and a sweet honey BBQ glaze, perfect for quick dinners.

Ingredients

Scale
  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • ½ cup BBQ sauce
  • ¼ cup honey
  • 1 cup mixed vegetables (frozen or fresh)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. In a large skillet over medium heat, sear the seasoned chicken for about 5 minutes on each side until golden brown.
  2. In a small bowl, whisk together the BBQ sauce and honey, then pour it over the seared chicken.
  3. Add the rice and chicken broth to the skillet, stirring to combine all the ingredients.
  4. Bring everything to a gentle simmer, cover the skillet, and cook on low for about 20 minutes, or until the rice is tender.
  5. In the last 5 minutes of cooking, sprinkle the mixed vegetables on top to steam before removing from heat.
  6. Let it sit for 5 minutes, then fluff the rice with a fork before serving.

Notes

Feel free to replace boneless chicken thighs with breasts for a leaner option, or use quinoa instead of rice for a different texture.
