Ingredients

- 2 cups chicken thighs or breasts
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup frozen peas
- Salt and pepper to taste
- 1 tablespoon olive oil
- Optional: chopped parsley for garnish
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the chopped onion and minced garlic. Sauté until soft, about 3 minutes.
- Push the mixture to the side and Add the chicken, browning for about 5 minutes on each side.
- Stir in the long-grain rice until well mixed.
- Pour in the chicken broth and bring to a boil.
- Reduce the heat to low, cover, and let simmer for 20 minutes.
- Add the frozen peas, stir gently, cover, and cook for another 5 minutes until the rice absorbs the liquid.
- Season with salt and pepper, and garnish with parsley if desired. Serve hot!
