Ingredients

  • 2 cups chicken thighs or breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup frozen peas
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Optional: chopped parsley for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion and minced garlic. Sauté until soft, about 3 minutes.
  3. Push the mixture to the side and Add the chicken, browning for about 5 minutes on each side.
  4. Stir in the long-grain rice until well mixed.
  5. Pour in the chicken broth and bring to a boil.
  6. Reduce the heat to low, cover, and let simmer for 20 minutes.
  7. Add the frozen peas, stir gently, cover, and cook for another 5 minutes until the rice absorbs the liquid.
  8. Season with salt and pepper, and garnish with parsley if desired. Serve hot!
