  • 8 oz (225g) penne or rotini pasta
  • 4 cloves fresh garlic, minced
  • 2 cups low-sodium chicken broth (480ml)
  • 1 cup heavy cream (240ml)
  • 1 cup freshly grated Parmesan cheese (100g)
  • 2 tbsp olive oil (30ml)
  • 2 cups fresh spinach (optional, about 60g)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken breasts with salt and pepper. Cook for about 6 minutes per side until they develop a golden crust. Remove the chicken from the pan and allow it to rest.
  3. In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
  4. Add the pasta and chicken broth; bring to a boil, cover, and simmer for about 10 minutes or until the pasta is al dente.
  5. Lower the heat and stir in heavy cream and grated Parmesan cheese until well combined, creating a creamy sauce.
  6. Slice the rested chicken and return it to the skillet, adding fresh spinach if desired. Toss gently to coat everything in the delicious sauce.
  7. Serve warm and garnish with additional Parmesan cheese if you wish.
