- 4 boneless chicken breasts
- 1 cup rice (white or brown)
- 1 cup chicken broth
- 1/2 cup honey BBQ sauce
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Heat olive oil in a large pan over medium heat.
- Season the chicken breasts with garlic powder, onion powder, salt, and pepper.
- Add the chicken to the pan and sear for about 3-4 minutes on each side until browned.
- Remove the chicken from the pan and set aside.
- In the same pan, add the rice and chicken broth, stirring to combine.
- Return the seared chicken to the pan and drizzle with honey BBQ sauce.
- Cover the pan and simmer on low heat for about 20 minutes, or until the rice is cooked and the chicken reaches an internal temperature of 165°F.
- Garnish with chopped green onions before serving.
Notes
For variety, substitute rice with quinoa or try different sauces. Searing the chicken enhances flavor.
