- 1 pound Kielbasa
- 2 tablespoons Honey
- 3 cloves Garlic, minced
- 2 tablespoons Soy Sauce
- 1 each Bell Peppers (red & yellow)
- 1 cup Baby Carrots
- 1 pound Baby Potatoes
- 2 tablespoons Olive Oil
- 2 tablespoons Fresh Parsley or Green Onions
Instructions
- Preheat the pan: Heat your large skillet over medium-high and add olive oil.
- Sauté the kielbasa: Place the sliced kielbasa in the pan and sauté for 4-5 minutes until it’s browned and crispy on the edges.
- Add garlic: Toss in the minced garlic and cook for an additional minute until fragrant.
- Combine ingredients: Add your chopped bell peppers, baby carrots, and halved baby potatoes to the pan.
- Make the sauce: In a small bowl, whisk together the honey and soy sauce, then pour it over the vegetables and kielbasa.
- Cook covered: Stir to coat everything in the sauce, then cover the skillet and let everything simmer for about 10-15 minutes, until the veggies are tender and the potatoes are cooked through. Stir occasionally to prevent sticking.
- Finishing touch: Once done, sprinkle with freshly chopped parsley or green onions for a vibrant finish.
