  • 1 cup Baby Carrots
  • 1 pound Baby Potatoes
  • 2 tablespoons Olive Oil
  • 2 tablespoons Fresh Parsley or Green Onions

Instructions

  1. Preheat the pan: Heat your large skillet over medium-high and add olive oil.
  2. Sauté the kielbasa: Place the sliced kielbasa in the pan and sauté for 4-5 minutes until it’s browned and crispy on the edges.
  3. Add garlic: Toss in the minced garlic and cook for an additional minute until fragrant.
  4. Combine ingredients: Add your chopped bell peppers, baby carrots, and halved baby potatoes to the pan.
  5. Make the sauce: In a small bowl, whisk together the honey and soy sauce, then pour it over the vegetables and kielbasa.
  6. Cook covered: Stir to coat everything in the sauce, then cover the skillet and let everything simmer for about 10-15 minutes, until the veggies are tender and the potatoes are cooked through. Stir occasionally to prevent sticking.
