- 1 lb chicken thighs, boneless and skinless
- 2 cups rice (jasmine or basmati)
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 2 tablespoons shawarma spice blend
- 4 cups chicken broth
- 1 cup plain yogurt
- 1 cucumber, diced
- Salt and pepper to taste
- Fresh parsley or cilantro for garnish
Instructions
- Marinate the chicken by combining chicken thighs with olive oil, shawarma spice blend, salt, and pepper in a large bowl. Let sit for at least 30 minutes.
- Heat olive oil in a large pot over medium heat. Add chopped onions and minced garlic, and sauté until the onions are softened and fragrant.
- Add the marinated chicken to the pot and cook until browned on all sides, about 5-7 minutes.
- Stir in the rice and let it toast for a couple of minutes before adding chicken broth.
- Bring the mixture to a boil, then cover and reduce the heat, allowing it to simmer for 15-20 minutes until the rice is cooked and the liquid is absorbed.
- Prepare a yogurt sauce by mixing yogurt with diced cucumber, salt, and pepper.
- After the rice is fluffy, gently fluff it with a fork before serving. Top with yogurt sauce and garnish with fresh parsley or cilantro.
Notes
For extra flavor, marinate the chicken overnight and add vegetables like bell peppers during cooking.
