  • 1 cup plain yogurt
  • 1 cucumber, diced

Instructions

  1. Marinate the chicken by combining chicken thighs with olive oil, shawarma spice blend, salt, and pepper in a large bowl. Let sit for at least 30 minutes.
  2. Heat olive oil in a large pot over medium heat. Add chopped onions and minced garlic, and sauté until the onions are softened and fragrant.
  3. Add the marinated chicken to the pot and cook until browned on all sides, about 5-7 minutes.
  4. Stir in the rice and let it toast for a couple of minutes before adding chicken broth.
