A comforting and flavorful one-pot pasta dish featuring Cajun sausage and a creamy sauce, perfect for weeknight dinners.

Ingredients

Scale
  • 1 (13oz) pack Cajun andouille sausage, cut into coins
  • 1 tbsp chopped garlic
  • 1 (14.5oz) can chicken broth (about 2 cups)
  • ½ cup heavy cream
  • 1 (10oz) can Rotel diced tomatoes and chilies
  • 8 ounces dry bowtie pasta (½ pound or approximately 2 cups)
  • 2 cups shredded cheddar cheese
  • 1 tsp Cajun seasoning

Instructions

  1. In a large skillet over medium heat, cook the Cajun sausage for about 5 minutes until browned. Remove and place on a paper towel-lined plate, leaving the grease in the pan.
  2. Sauté the garlic in the remaining sausage grease for about 1 minute.
  3. Pour in the chicken broth, diced tomatoes, heavy cream, and Cajun seasoning, and stir.
  4. Add the dry pasta to the skillet, cover, and simmer on low heat for about 14 minutes.
  5. Once the pasta is tender, stir in the cooked sausage and shredded cheddar cheese until melted and creamy.
  6. Serve hot and enjoy!

Notes

Garnish with fresh parsley or sliced green onions. Store leftovers in an airtight container for up to 3 days.
