- 4 boneless skinless chicken breasts
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 2 tablespoons olive oil
- 3 cloves garlic minced
- 1/2 cup sun dried tomatoes chopped
- 1 cup chicken broth
- 1 cup heavy cream
- 3/4 cup grated Parmesan cheese
- 2 cups fresh baby spinach
- 1/4 teaspoon red pepper flakes optional
- Fresh basil for garnish
Instructions
- 1. Season chicken with salt pepper and Italian seasoning
- 2. Heat olive oil in large skillet and sear chicken until golden on both sides then remove
- 3. Sauté garlic until fragrant about thirty seconds
- 4. Add sun dried tomatoes and cook briefly
- 5. Pour in chicken broth scraping browned bits from pan
- 6. Stir in heavy cream and simmer gently
- 7. Whisk in Parmesan cheese until smooth and slightly thickened
- 8. Return chicken to skillet and simmer until cooked through
- 9. Add spinach and cook until wilted
- 10. Garnish with basil and serve warm
Notes
- Use freshly grated Parmesan for best texture
- Simmer gently to prevent curdling
- Add mushrooms for extra depth
- Taste and adjust salt after adding cheese
