- 1 pound boneless, skinless chicken breasts, diced
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup frozen peas
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- ½ teaspoon salt
- ½ teaspoon black pepper
- 2 cups chicken broth
- 1 cup heavy cream
- 1 pound gnocchi
- 1 tablespoon cornstarch (optional, for thickening)
- Fresh parsley, for garnish (optional)
Instructions
- Heat the olive oil in a large pot or skillet over medium heat.
- Add the diced chicken and cook until browned on all sides, about 5-7 minutes. Remove the chicken and set aside.
- In the same pot, add the chopped onion, garlic, carrots, and celery. Sauté for about 4-5 minutes until the vegetables soften.
- Stir in the thyme, parsley, salt, and pepper, mixing everything thoroughly.
- Pour in the chicken broth and heavy cream, stirring to combine.
- Bring the mixture to a low boil before adding the gnocchi. Reduce the heat and let simmer for 3-5 minutes until the gnocchi floats to the top.
- If using cornstarch, mix it with a little water to create a slurry, stir it in, and let simmer for another 2-3 minutes until thickened.
- Add the cooked chicken back to the pot and mix everything well.
- Remove from heat and serve immediately, garnished with fresh parsley if desired.
Notes
For a different flavor, substitute heavy cream with coconut milk for a dairy-free version.
