  • 1 cup celery, diced
  • 1 cup frozen peas
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 pound gnocchi
  • 1 tablespoon cornstarch (optional, for thickening)
  • Fresh parsley, for garnish (optional)

Instructions

  1. Heat the olive oil in a large pot or skillet over medium heat.
  2. Add the diced chicken and cook until browned on all sides, about 5-7 minutes. Remove the chicken and set aside.
  3. In the same pot, add the chopped onion, garlic, carrots, and celery. Sauté for about 4-5 minutes until the vegetables soften.
  4. Stir in the thyme, parsley, salt, and pepper, mixing everything thoroughly.
  5. Pour in the chicken broth and heavy cream, stirring to combine.
  6. Bring the mixture to a low boil before adding the gnocchi. Reduce the heat and let simmer for 3-5 minutes until the gnocchi floats to the top.
  7. If using cornstarch, mix it with a little water to create a slurry, stir it in, and let simmer for another 2-3 minutes until thickened.
  8. Add the cooked chicken back to the pot and mix everything well.
  9. Remove from heat and serve immediately, garnished with fresh parsley if desired.

Notes

For a different flavor, substitute heavy cream with coconut milk for a dairy-free version.
