- 1 pound ground turkey
- 1 cup orzo pasta
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup diced tomatoes
- 4 cups chicken broth
- 1 cup spinach
- Salt and pepper to taste
- Olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic, sautéing until softened and fragrant.
- Add in the ground turkey, breaking it apart as it cooks until browned.
- Stir in the diced tomatoes along with the chicken broth.
- Bring mixture to a boil, then add the orzo. Reduce heat and let it simmer.
- Cook for about 8-10 minutes, stirring occasionally, until the orzo is tender.
- Stir in the spinach and cook until wilted.
- Season with salt and pepper to taste, serve hot, and enjoy!
Notes
