- 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
- 8 oz penne pasta or pasta of choice
- 1/2 cup heavy cream
- 1 cup chicken broth
- 1/2 cup grated parmesan cheese, plus more for serving
- 1/3 cup sun-dried tomatoes in oil, drained and chopped
- 3 cloves garlic, minced
- 1 small onion, finely diced
- 1 tablespoon Italian seasoning
- 1/2 teaspoon red pepper flakes (adjust to taste)
- 2 tablespoons olive oil
- 1 teaspoon lemon zest
- 1/4 cup fresh basil, chopped
- Salt and freshly ground black pepper, to taste
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chicken pieces, season with salt and black pepper, and sauté until golden brown, about 5-7 minutes.
- Stir in the diced onion and minced garlic, cooking until the onion is translucent, about 3-4 minutes.
- Sprinkle in the Italian seasoning and red pepper flakes, mixing well.
- Add the chicken broth and bring to a simmer. Then, incorporate the pasta and cook according to package instructions, usually around 10 minutes, until al dente.
- Stir in the heavy cream, sun-dried tomatoes, lemon zest, and parmesan cheese until combined and the sauce thickens.
- Finish with fresh basil, season to taste, and serve hot with additional parmesan on top.
Notes
For a vegetarian option, swap chicken for tofu. This dish can be frozen for up to two months.
