Ingredients

  • 2 tablespoons olive oil
  • 1 cup onion, chopped
  • 6 cloves garlic, minced
  • 14 oz. fresh tomatoes, diced
  • 2 cups chicken broth
  • 1 tablespoon chopped Italian basil
  • 8 oz. spaghetti
  • 1/4 teaspoon salt (or to taste)
  • 1/4 cup shredded Parmesan cheese
  • 1 tablespoon chopped Italian parsley

Instructions

  1. Heat olive oil in a wide skillet or pot over medium heat.
  2. Sauté the onion and garlic for about 3 minutes until golden and fragrant.
  3. Toss in diced tomatoes, chicken broth, and Italian basil; stir to combine.
  4. Add spaghetti, pressing it down with a spatula to submerge in liquid, or break it in half if necessary.
  5. Cover and reduce heat to medium-low, cooking for 8 minutes. Check for doneness and add a splash of chicken broth if needed.
  6. Once cooked, take off the lid, sprinkle with salt, and turn off the heat.
  7. Finish with a sprinkle of Parmesan and parsley before serving.

Notes

For added flavor, consider sautéing onions until caramelized. Reserve pasta water to adjust sauce thickness if needed.
