Ingredients

- 2 tablespoons olive oil
- 1 cup onion, chopped
- 6 cloves garlic, minced
- 14 oz. fresh tomatoes, diced
- 2 cups chicken broth
- 1 tablespoon chopped Italian basil
- 8 oz. spaghetti
- 1/4 teaspoon salt (or to taste)
- 1/4 cup shredded Parmesan cheese
- 1 tablespoon chopped Italian parsley
Instructions
- Heat olive oil in a wide skillet or pot over medium heat.
- Sauté the onion and garlic for about 3 minutes until golden and fragrant.
- Toss in diced tomatoes, chicken broth, and Italian basil; stir to combine.
- Add spaghetti, pressing it down with a spatula to submerge in liquid, or break it in half if necessary.
- Cover and reduce heat to medium-low, cooking for 8 minutes. Check for doneness and add a splash of chicken broth if needed.
- Once cooked, take off the lid, sprinkle with salt, and turn off the heat.
- Finish with a sprinkle of Parmesan and parsley before serving.
Notes
For added flavor, consider sautéing onions until caramelized. Reserve pasta water to adjust sauce thickness if needed.
