A quick and easy one-pot taco pasta featuring seasoned ground beef or turkey, tomatoes, beans, and cheese, perfect for weeknight dinners.

- 8 oz pasta (penne, rotini, or shells)
- 1 lb ground beef or turkey
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 can (14.5 oz) diced tomatoes
- 1 can black beans, drained and rinsed
- 2 cups broth (chicken or vegetable)
- 1 cup corn (optional)
- 1 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
- Heat a large pot over medium. Add the ground beef or turkey, chopped onion, and minced garlic. Cook until browned, about 6–8 minutes.
- Drain any excess fat from the pot.
- Stir in the taco seasoning, diced tomatoes, black beans, and corn.
- Pour in 2 cups of broth and bring to a gentle boil.
- Add the dry pasta to the pot and reduce heat to a simmer. Cover and cook until the pasta is al dente, about 10–12 minutes.
- Remove from heat and stir in the shredded cheese until melted.
- Adjust with salt and pepper. Spoon into bowls and garnish with cilantro before serving.
Notes
If you prefer a creamier finish, stir in a splash of cream or sour cream before serving. For extra flavor, add smoked paprika for a twist.
