A quick and easy one pot dish that combines taco flavors with pasta for a hearty, Mexican-inspired comfort meal.

- 1 pound ground beef or turkey
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning (or 2–3 tbsp homemade taco mix)
- 1 can diced tomatoes (14.5 oz)
- 2 cups chicken or vegetable broth
- 8 ounces short pasta (mostaccioli, penne, or similar)
- 1 cup corn (frozen or canned, drained)
- 1 cup shredded cheese (cheddar or Mexican blend)
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
- Heat a large pot over medium. Add the ground beef or turkey and cook, breaking it apart, until fully browned. Drain any excess fat.
- Add the chopped onion and minced garlic to the pot. Sauté for 2–3 minutes, until the onion is translucent.
- Stir in the taco seasoning and the can of diced tomatoes (with juices). Pour in the broth.
- Add the dry pasta and bring the pot to a boil over medium-high heat.
- Reduce heat to low, cover, and simmer for 10–12 minutes, stirring occasionally.
- When the pasta is tender, stir in the corn and shredded cheese until melted. Season with salt and pepper and serve, garnished with chopped cilantro.
Notes
Can be customized by swapping proteins or adding veggies. For creaminess, stir in 1/4 cup sour cream or cream cheese at the end.
