- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup colorful Peeps (marshmallow candies)
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter, granulated sugar, and brown sugar until smooth and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Whisk together the flour, baking soda, and salt in another bowl.
- Blend the dry ingredients into the wet mixture, stirring until just combined.
- Flatten a small amount of dough in your palm, place a Peep in the center, and cover with more dough, shaping it into a ball.
- Arrange the cookie balls on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes until edges begin to turn golden.
- Cool on the baking sheet for a few minutes before transferring to a wire rack.

For a fun twist, try different flavors or colors of Peeps, or add chocolate chips for a richer cookie!
