Ingredients

  • 8 oz wide Lo Mein noodles, cooked and rinsed
  • 1 tablespoon peanut oil
  • 1 pound ground pork
  • 1/4 cup + 2 tablespoons sliced green onions
  • 1/2 cup low-sodium chicken broth
  • 3 tablespoons mirin
  • 2 tablespoons dark soy sauce
  • 1 tablespoon minced garlic
  • 2 teaspoons grated ginger
  • 1 teaspoon sesame oil
  • 1/2 teaspoon sriracha (adjust to taste)
  • 4 cups coleslaw mix

Instructions

  1. Cook the Lo Mein noodles according to package instructions. Rinse and set aside.
  2. In a large skillet, heat the peanut oil over medium-high heat. Add the ground pork and cook until it’s nicely browned, about 5-7 minutes. Toss in the 1/4 cup of sliced green onions halfway through.
  3. In a separate bowl, whisk together the chicken broth, mirin, dark soy sauce, minced garlic, grated ginger, sesame oil, and sriracha until well combined.
  4. Add the cooked noodles and coleslaw mix to the skillet with the pork. Pour the sauce over the top and toss everything together for about 2-3 minutes until well coated and heated through.
  5. Remove from heat, garnish with the remaining green onions, and serve hot.

Notes

Serve with sesame seeds or alongside a cucumber salad dressed with rice vinegar for a refreshing side.
