- 8 oz wide Lo Mein noodles, cooked and rinsed
- 1 tablespoon peanut oil
- 1 pound ground pork
- 1/4 cup + 2 tablespoons sliced green onions
- 1/2 cup low-sodium chicken broth
- 3 tablespoons mirin
- 2 tablespoons dark soy sauce
- 1 tablespoon minced garlic
- 2 teaspoons grated ginger
- 1 teaspoon sesame oil
- 1/2 teaspoon sriracha (adjust to taste)
- 4 cups coleslaw mix
Instructions
- Cook the Lo Mein noodles according to package instructions. Rinse and set aside.
- In a large skillet, heat the peanut oil over medium-high heat. Add the ground pork and cook until it’s nicely browned, about 5-7 minutes. Toss in the 1/4 cup of sliced green onions halfway through.
- In a separate bowl, whisk together the chicken broth, mirin, dark soy sauce, minced garlic, grated ginger, sesame oil, and sriracha until well combined.
- Add the cooked noodles and coleslaw mix to the skillet with the pork. Pour the sauce over the top and toss everything together for about 2-3 minutes until well coated and heated through.
- Remove from heat, garnish with the remaining green onions, and serve hot.
Notes
Serve with sesame seeds or alongside a cucumber salad dressed with rice vinegar for a refreshing side.
